Diva at the Met


Off to another restaurant on my Dine Out List and what better day to splurge than on my birthday. Diva at the Met is located just across the street from the Four Seasons hotel that links to Pacific Centre downtown. Heads up- the main entrance is actually located beside the front doors of the Metropolitan. With the assortment of dishes on the menu, it's kinda difficult to decide on what to get so thank god for the tasting menu which serves a five course meal for $55/person. Like most preset menus, everyone at your table is expected to order the same thing. Boo for less meal variety :( Anyways, the meal starts off with quite a cute molecular infused shot of something green I don't remember and a selection of bread sticks.

Pretty carb heavy eh? Well the five course meal finally started with the Salmon Tataki accompanied with pickled vegetables, sorrel and a nice funnel of watermelon radish. I l o v e d the salmon. Seared and marinated perfectly so the ginger seasoning was strong enough. The fish meat pulled apart just right too.

Second up was the Pan Seared Foie Gras which is paired with yuzu marmalade, membrillo, apple, and a piece of brioche. I'm not exactly the biggest fan of foie gras but this dish was still pretty satisfying for me when I put all the ingredients together into one bite. I liked the brioche's dense texture but it wasn't as crumbly as I expected.

The Smoked Black Cod was our next dish which came with an olive, tomato, capers, and almonds. The cod was perfectly cooked-juicy on the inside and slightly crispy on the outside. The meat pulled apart nicely and really packed a punch when you add the mixture of tomato with it.

Another one of my favourites was the dish after - Prime Beef Tenderloin with braised root vegetable fricasse doused with red beet root jus.  The beef was warm but oh my god was it juicy. The tenderloin lacked a bit of that classic "beef" taste so it's understandable that the red beet juice really helped to bring out that strong flavours of the meat. I need more of this quality of beef in my life.

The last dish was dessert: Torn Spice Cake topped with creme fraiche ice cream and pumpkin marmalade. I'm not a fan of spice or pumpkin in general so I didn't enjoy it was much as I would've liked to but the cake was soft and sponge-y with a tinge of aromatic spice.

Food quality: 9.5/10 (This is good quality stuff here!)

Service: 9/10 (Professional and all but I like the waiters came a bit too often to check up on us and our meal)

Atmosphere: 9.5/10 (It's a hotel restaurant, I don't really expect much less)

Price/affordability: 8/10 (For a hotel restaurant, the prices are kinda expected especially for this quality of food/service/ambiance)

Would I go back/recommend this place?: Not sure if I would go back, I feel like there are lots of substitutes for this type of experience (eg. at all the other hotels in the city) and I'm not sure if Diva offers something truly unique enough for me to come back. However, I do recommend this place if you want to splurge a bit or are looking for a satisfying food experience. :)
